The cooking surface dictates the pizza, not the badge on the box: a 12in oven maxes out at an 11in pizza, and a 13–14in pie needs a 16in oven. Size against the pizza you actually want to eat.

Spec-sheet degrees

Manufacturer max-temp numbers are top-of-stone radiant readings, not air temp. Real-world cooking temperature runs 50–100°F below the number on the box — a "950°F" oven is not putting 950°F into your pizza.

Winter cracks the stone
